- 1 teaspoon ground cumin
- 1 teaspoon turmeric
- 1 teaspoon cayenne pepper (adjust to preference)
- 1 can (14 ounces) coconut milk
- 1 cup vegetable broth or water
- 1 pound firm white fish fillets (like halibut or snapper), cut into bite-sized pieces
- 1 tablespoon lemon juice
- Salt and pepper to taste
- Chopped parsley, for garnish
- Steamed jasmine rice, for serving
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the diced onion and sauté until soft and translucent, about 5 minutes.
- Incorporate the minced garlic and ginger, cooking for an additional 2 minutes until aromatic.
- Sprinkle in the ground coriander, cumin, turmeric, and cayenne pepper, stirring continuously for about a minute.
- Gradually pour in the coconut milk and vegetable broth, mixing well to create a smooth base.
- Allow the mixture to come to a gentle boil.
- Gently add the fish pieces, ensuring they are well-coated in the sauce.
- Let the stew simmer for approximately 5-7 minutes, or until the fish is cooked through and flakes easily.
- Stir in the lemon juice and season with salt and pepper to taste.
- Remove from heat and garnish with fresh parsley.
- Serve hot over a bed of steamed jasmine rice.
