Ingredients

  • 1 cup cooked sushi rice
  • 1 ripe avocado
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • 1/2 cup crispy shallots
  • 1/2 cup sliced cucumber
  • 1/2 cup shredded carrots
  • 1/4 cup fresh cilantro
  • Soy sauce for drizzling

Instructions

  1. Prepare the sushi rice according to package instructions and let it cool.
  2. In a bowl, mash the avocado and mix in lime juice and chili powder to create the spicy guacamole.
  3. Lay a sushi rice tortilla flat and spread a layer of sushi rice over it.
  4. Add a generous amount of spicy guacamole on top of the rice.
  5. Layer the sliced cucumber, shredded carrots, and fresh cilantro over the guacamole.
  6. Sprinkle crispy shallots on top for added crunch.
  7. Carefully roll the tortilla tightly to form a burrito shape.
