Ingredients

Instructions
- Prepare the sushi rice according to package instructions and let it cool.
- In a bowl, mash the avocado and mix in lime juice and chili powder to create the spicy guacamole.
- Lay a sushi rice tortilla flat and spread a layer of sushi rice over it.
- Add a generous amount of spicy guacamole on top of the rice.
- Layer the sliced cucumber, shredded carrots, and fresh cilantro over the guacamole.
- Sprinkle crispy shallots on top for added crunch.
- Carefully roll the tortilla tightly to form a burrito shape.
- Slice the sushi burrito in half and drizzle with soy sauce before serving.
