- 2 cups mixed nuts (almonds, pecans, walnuts, cashews)
- 1/2 cup granulated sugar
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon cayenne pepper (optional for heat)
- 1/4 teaspoon salt
- 1 tablespoon unsalted butter, melted
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the mixed nuts, sugar, cinnamon, nutmeg, cayenne pepper (if using), and salt. Toss until the nuts are evenly coated.
- In a small bowl, mix together the melted butter and vanilla extract. Pour this mixture over the nuts and stir until all the nuts are well coated.
- Spread the nut mixture in a single layer on the prepared baking sheet.
- Bake in the preheated oven for 15-20 minutes, stirring halfway through, until the nuts are golden brown and fragrant. Keep a close eye on them to prevent burning.
- Remove from the oven and let the nuts cool completely on the baking sheet. They will harden as they cool.
- Once cooled, break apart any clumps and transfer to a serving bowl or airtight container.
Notes
- For a sweeter version, add 1/4 cup of maple syrup or honey to the nut mixture before baking.
