  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3 large eggs
  • 1/2 cup sugar-free sweetener (like erythritol or stevia)
  • 1/2 cup unsweetened applesauce
  • 1 teaspoon vanilla extract
  • 1/2 cup mini sugar-free chocolate chips
  • 1 cup mini marshmallows
  • 1/2 cup crushed graham crackers (sugar-free, if available)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large bowl, whisk together the almond flour, cocoa powder, baking powder, baking soda, and salt until well combined.
  3. In another bowl, beat the eggs, then add the sugar-free sweetener, applesauce, and vanilla extract. Mix until smooth.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Be careful not to overmix.
  5. Fold in the mini chocolate chips.
  6. Divide the batter evenly among the cupcake liners, filling each about two-thirds full.
  7. Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
  8. Remove from the oven and let the cupcakes cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
  9. Once cooled, top each cupcake with a few mini marshmallows and a sprinkle of crushed graham crackers. For a toasted effect, you can use a kitchen torch to lightly toast the marshmallows.

Notes

  • To enhance the recipe, try adding a layer of sugar-free chocolate ganache on top of the cupcakes for extra richness.
  • You can substitute the almond flour with coconut flour for a different flavor and texture, but adjust the amount as coconut flour is more absorbent (use about 1/3 cup).
