- 1/2 cup unsweetened cocoa powder

- 3 large eggs

- 1/2 cup unsweetened applesauce
- 1 teaspoon vanilla extract
- 1/2 cup mini sugar-free chocolate chips
- 1 cup mini marshmallows
- 1/2 cup crushed graham crackers (sugar-free, if available)
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a large bowl, whisk together the almond flour, cocoa powder, baking powder, baking soda, and salt until well combined.
- In another bowl, beat the eggs, then add the sugar-free sweetener, applesauce, and vanilla extract. Mix until smooth.
- Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Be careful not to overmix.
- Fold in the mini chocolate chips.
- Divide the batter evenly among the cupcake liners, filling each about two-thirds full.
- Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
- Remove from the oven and let the cupcakes cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
- Once cooled, top each cupcake with a few mini marshmallows and a sprinkle of crushed graham crackers. For a toasted effect, you can use a kitchen torch to lightly toast the marshmallows.
Notes
- To enhance the recipe, try adding a layer of sugar-free chocolate ganache on top of the cupcakes for extra richness.
- You can substitute the almond flour with coconut flour for a different flavor and texture, but adjust the amount as coconut flour is more absorbent (use about 1/3 cup).
