Ingredients

- 4 medium zucchinis
- 1 cup cooked quinoa
- 1 cup diced tomatoes
- 1 cup black beans, drained and rinsed
- 1 cup corn
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 cup shredded cheese (optional)
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the zucchinis in half lengthwise and scoop out the center to create boats.
- In a bowl, mix the cooked quinoa, diced tomatoes, black beans, corn, cumin, chili powder, salt, and pepper.
- Fill each zucchini boat with the quinoa mixture.
- If desired, sprinkle shredded cheese on top of the stuffed zucchinis.
- Place the stuffed zucchinis on a baking sheet and bake for 25-30 minutes, or until the zucchinis are tender.
- Remove from the oven and let cool for a few minutes before serving.
