- 2 pounds ground turkey
- 1 cup fresh spinach, finely chopped
- 1/2 cup dried cranberries, diced
- 1/2 cup seasoned breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup onion, minced
- 2 cloves garlic, pressed
- 1 teaspoon dried thyme
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 1/4 teaspoon crushed red pepper (optional)
- 1 tablespoon extra virgin olive oil
- 1 egg, lightly beaten
Instructions
- Preheat your oven to 375°F and prepare a baking sheet with parchment paper.
- In a large mixing bowl, combine the ground turkey with the chopped spinach, diced cranberries, seasoned breadcrumbs, Parmesan cheese, minced onion, pressed garlic, thyme, salt, black pepper, and optional crushed red pepper. Stir the mixture thoroughly until all ingredients are well blended.
- On a clean surface, lay out a large piece of plastic wrap. Transfer the turkey mixture onto the plastic wrap and mold it into a rectangular shape, about an inch thick.
- Carefully roll the turkey mixture into a log using the plastic wrap, ensuring the sides are tucked in tightly. Twist the ends of the wrap to secure the log and place it in the refrigerator for about 30 minutes to allow it to firm up.
- Once chilled, unwrap the turkey log and position it seam-side down on the prepared baking sheet. Drizzle olive oil over the top and season with a pinch of salt and pepper.
- Bake in the preheated oven for 45 to 50 minutes, or until the internal temperature reaches 165°F.
- After baking, allow the turkey roll to rest for 10 minutes before slicing. Serve it warm, and enjoy!
