- 8 large portobello mushrooms, stems removed
- 1 cup Asiago cheese, grated
- 1/2 cup cream cheese, softened
- 1/4 cup fresh basil, chopped
- 1/4 cup breadcrumbs
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- 2 tablespoons olive oil
- 1/4 cup grated Parmesan cheese
- Fresh basil leaves for garnish
Instructions
- Preheat the oven to 375°F.
- In a mixing bowl, combine the Asiago cheese, cream cheese, chopped basil, breadcrumbs, minced garlic, salt, black pepper, and red pepper flakes. Mix until well combined.
- Brush the portobello mushrooms with olive oil on both sides and place them gill-side up on a baking sheet.
- Spoon the cheese mixture generously into each mushroom cap, pressing down slightly to pack it in.
- Sprinkle the tops with grated Parmesan cheese.
- Bake in the preheated oven for 20-25 minutes, or until the mushrooms are tender and the cheese is bubbly and golden.
- Remove from the oven and let cool for a few minutes. Garnish with fresh basil leaves before serving.

- For a meatier filling, add cooked and crumbled Italian sausage to the cheese mixture.
