  • 8 large portobello mushrooms, stems removed
  • 1 cup Asiago cheese, grated
  • 1/2 cup cream cheese, softened
  • 1/4 cup fresh basil, chopped
  • 1/4 cup breadcrumbs
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 tablespoons olive oil
  • 1/4 cup grated Parmesan cheese
  • Fresh basil leaves for garnish

Instructions

  1. Preheat the oven to 375°F.
  2. In a mixing bowl, combine the Asiago cheese, cream cheese, chopped basil, breadcrumbs, minced garlic, salt, black pepper, and red pepper flakes. Mix until well combined.
  3. Brush the portobello mushrooms with olive oil on both sides and place them gill-side up on a baking sheet.
  4. Spoon the cheese mixture generously into each mushroom cap, pressing down slightly to pack it in.
  5. Sprinkle the tops with grated Parmesan cheese.
  6. Bake in the preheated oven for 20-25 minutes, or until the mushrooms are tender and the cheese is bubbly and golden.
  7. Remove from the oven and let cool for a few minutes. Garnish with fresh basil leaves before serving.
