Light and Fluffy Strawberry Soufflé

- 1 cup fresh strawberries, hulled and sliced
- 1/4 cup granulated sugar, divided
- 3 large egg whites
- 1/4 teaspoon cream of tartar
- 1/2 teaspoon vanilla extract
- 1 tablespoon unsalted butter, softened
- 1 tablespoon all-purpose flour
- 1/4 cup whole milk
- Pinch of salt
- Powdered sugar, for dusting (optional)
Instructions
- Preheat the oven to 375°F. Grease four ramekins with softened butter and dust with flour, tapping out the excess.
- In a small saucepan over medium heat, combine the sliced strawberries and 2 tablespoons of granulated sugar. Cook for about 5 minutes, stirring occasionally, until the strawberries are soft and syrupy. Remove from heat and let cool slightly.
- In a separate bowl, beat the egg whites and cream of tartar with an electric mixer on medium speed until soft peaks form. Gradually add the remaining 2 tablespoons of granulated sugar, continuing to beat until stiff peaks form.
- In another saucepan, heat the milk over medium heat until warm. Whisk in the remaining 2 tablespoons of sugar, vanilla extract, and a pinch of salt. Stir in the cooked strawberries until well combined.
- Gently fold the strawberry mixture into the beaten egg whites, being careful not to deflate the egg whites. Spoon the mixture into the prepared ramekins, filling them about three-quarters full.
- Place the ramekins on a baking sheet and bake for 12-15 minutes, or until the soufflés are puffed and lightly golden on top. Serve immediately, dusted with powdered sugar if desired.
Notes
- For a richer flavor, add a teaspoon of lemon juice to the strawberry mixture.
- You can substitute raspberries or blueberries for strawberries for a different fruit flavor.
