Description

Light and Fluffy Strawberry Soufflé


Ingredients

  • 1 cup fresh strawberries, hulled and sliced
  • 1/4 cup granulated sugar, divided
  • 3 large egg whites
  • 1/4 teaspoon cream of tartar
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon unsalted butter, softened
  • 1 tablespoon all-purpose flour
  • 1/4 cup whole milk
  • Pinch of salt
  • Powdered sugar, for dusting (optional)

Instructions

  1. Preheat the oven to 375°F. Grease four ramekins with softened butter and dust with flour, tapping out the excess.
  2. In a small saucepan over medium heat, combine the sliced strawberries and 2 tablespoons of granulated sugar. Cook for about 5 minutes, stirring occasionally, until the strawberries are soft and syrupy. Remove from heat and let cool slightly.
  3. In a separate bowl, beat the egg whites and cream of tartar with an electric mixer on medium speed until soft peaks form. Gradually add the remaining 2 tablespoons of granulated sugar, continuing to beat until stiff peaks form.
  4. In another saucepan, heat the milk over medium heat until warm. Whisk in the remaining 2 tablespoons of sugar, vanilla extract, and a pinch of salt. Stir in the cooked strawberries until well combined.
  5. Gently fold the strawberry mixture into the beaten egg whites, being careful not to deflate the egg whites. Spoon the mixture into the prepared ramekins, filling them about three-quarters full.
  6. Place the ramekins on a baking sheet and bake for 12-15 minutes, or until the soufflés are puffed and lightly golden on top. Serve immediately, dusted with powdered sugar if desired.

Notes

  • For a richer flavor, add a teaspoon of lemon juice to the strawberry mixture.
  • You can substitute raspberries or blueberries for strawberries for a different fruit flavor.
