Description

A unique and creamy twist on traditional risotto, featuring fresh strawberries and Parmesan cheese.


Ingredients

  • 1 cup Arborio rice
  • 4 cups chicken or vegetable broth
  • 1 cup fresh strawberries, chopped
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 small onion, finely chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a saucepan, heat the broth and keep it warm over low heat.
  2. In a large skillet, heat the olive oil over medium heat and sauté the onion until translucent.
  3. Add the Arborio rice to the skillet and stir for 1-2 minutes until the rice is lightly toasted.
  4. Gradually add the warm broth, one ladle at a time, stirring frequently until the liquid is absorbed before adding more.
  5. After about 15 minutes, add the chopped strawberries and continue to stir.
  6. Once the rice is creamy and al dente, stir in the heavy cream and Parmesan cheese.
  7. Season with salt and pepper to taste, and serve warm.

Notes

  • For a sweeter flavor, consider adding a bit of sugar to the strawberries.
  • Garnish with additional strawberries or a sprinkle of Parmesan before serving.
