A unique and creamy twist on traditional risotto, featuring fresh strawberries and Parmesan cheese.
Ingredients

- 1 cup Arborio rice
- 4 cups chicken or vegetable broth
- 1 cup fresh strawberries, chopped
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 small onion, finely chopped
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- In a saucepan, heat the broth and keep it warm over low heat.
- In a large skillet, heat the olive oil over medium heat and sauté the onion until translucent.
- Add the Arborio rice to the skillet and stir for 1-2 minutes until the rice is lightly toasted.
- Gradually add the warm broth, one ladle at a time, stirring frequently until the liquid is absorbed before adding more.
- After about 15 minutes, add the chopped strawberries and continue to stir.
- Once the rice is creamy and al dente, stir in the heavy cream and Parmesan cheese.
- Season with salt and pepper to taste, and serve warm.
Notes
- For a sweeter flavor, consider adding a bit of sugar to the strawberries.
- Garnish with additional strawberries or a sprinkle of Parmesan before serving.
