Ingredients

  • 1/4 teaspoon salt
  • 1 tablespoon granulated sugar
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 cup cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, hulled and sliced
  • 1 tablespoon lemon juice
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat the oven to 375°F. Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, salt, and granulated sugar.
  3. Add the cold, cubed butter to the flour mixture. Use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.
  4. Gradually add 1/4 cup of cold water, mixing until the dough comes together. Do not overmix.
  5. Turn the dough out onto a floured surface and shape it into a rectangle. Wrap in plastic wrap and refrigerate for at least 30 minutes.
  6. While the dough chills, prepare the cream cheese filling. In a medium bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Mix until smooth and creamy.
  7. In another bowl, toss the sliced strawberries with lemon juice and set aside.
  8. Once the dough has chilled, roll it out into a large rectangle about 1/4 inch thick. Cut into smaller squares (about 4×4 inches).
  9. Place a tablespoon of the cream cheese mixture in the center of each square, then top with a few slices of strawberries.
  10. Fold the corners of each square towards the center, pinching to seal. Place the danishes on the prepared baking sheet.
  11. Brush the tops with the beaten egg for a golden finish.
  12. Bake for 20-25 minutes or until golden brown. Let cool slightly before serving.

Notes

  • To enhance the flavor, consider adding a teaspoon of almond extract to the cream cheese filling.
  • For a twist, substitute blueberries or raspberries for the strawberries.
