- 4 large flour tortillas
- 1/4 cup graham cracker crumbs

Instructions
- In a medium bowl, combine the sliced strawberries, granulated sugar, and lemon juice. Toss gently and let sit for about 10 minutes to macerate.
- In another bowl, mix the softened cream cheese, powdered sugar, vanilla extract, and lemon zest until smooth and creamy.
- Lay a tortilla flat on a clean surface. Spread about 1/4 of the cream cheese mixture evenly over the tortilla, leaving a small border around the edges.
- Sprinkle 1 tablespoon of graham cracker crumbs over the cream cheese layer. Add a few spoonfuls of the macerated strawberries on top.
- Starting from one edge, carefully roll the tortilla tightly to form a log. Repeat with the remaining tortillas, cream cheese mixture, graham cracker crumbs, and strawberries.
- Once all the rolls are made, slice each roll into 1-inch pieces. Arrange on a serving platter and drizzle with whipped cream if desired.
- Serve immediately or refrigerate for up to 2 hours before serving for a chilled treat.
