Ingredients

  • 2 cups fresh strawberries, hulled and sliced
  • 1/4 cup granulated sugar
  • 1 cup water
  • 1/2 cup tapioca pearls
  • 2 cups milk (or non-dairy milk)
  • 1 teaspoon vanilla extract
  • Ice cubes

Instructions

  1. In a blender, combine the sliced strawberries and granulated sugar. Blend until smooth. Strain the mixture through a fine mesh sieve into a bowl to remove seeds, pressing down with a spatula to extract as much juice as possible. Set aside.
  2. In a small saucepan, bring 1 cup of water to a boil. Add the tapioca pearls and stir gently. Reduce heat to medium and cook according to package instructions, usually about 5-7 minutes, until the pearls are translucent.
  3. Once cooked, remove the tapioca pearls from heat and drain them in a fine mesh strainer. Rinse under cold water to stop the cooking process and prevent sticking.
  4. In a large glass, add a few spoonfuls of the cooked tapioca pearls. Pour in the strawberry puree, followed by the milk and vanilla extract. Stir gently to combine.
  5. Add ice cubes to the glass and stir again. Taste and adjust sweetness if desired by adding more sugar or strawberry puree.
  6. Serve immediately with a wide straw to enjoy the boba!
