- 2 cups ripe strawberries, hulled and quartered
- 1/2 cup fresh basil leaves, tightly packed
- 1/2 cup granulated sugar
- 1/2 cup water
- 1 tablespoon freshly squeezed lemon juice
- 1/4 cup honey
Instructions
- Begin by heating the water and sugar in a saucepan over medium heat, stirring until the sugar is fully dissolved. Once dissolved, take it off the heat and allow it to cool completely.
- In a blender, combine the strawberries, basil leaves, and lemon juice. Pour in the cooled sugar syrup and blend until you achieve a silky smooth consistency.
- Strain the blended mixture through a fine sieve into a clean bowl to eliminate any seeds and basil remnants, discarding the solids left behind.
- Transfer the strained mixture into a shallow dish and place it in the freezer for about 1 hour, allowing it to start freezing.
- After the hour, take the dish out and use a fork to scrape and stir the mixture, breaking up any ice that has formed. Return it to the freezer for another hour.
- When the sorbet is fully frozen and has a fluffy texture, scoop it into chilled bowls.
- Finish by drizzling honey over the top of each serving and adding a few extra basil leaves for a touch of elegance.

- For a richer flavor, consider incorporating 1/4 cup of coconut milk into the strawberry mixture before blending.
