A delicious twist on traditional overnight oats featuring strawberries and balsamic vinegar.
Ingredients

- 1 cup rolled oats
- 1 cup unsweetened almond milk (or any milk of choice)
- 1 tablespoon chia seeds
- 2 tablespoons balsamic vinegar
- 2 tablespoons honey or maple syrup
- 1 teaspoon vanilla extract
- 1 cup fresh strawberries, hulled and sliced
- Pinch of salt
Instructions
- In a medium bowl, combine rolled oats, almond milk, chia seeds, balsamic vinegar, honey (or maple syrup), vanilla extract, and a pinch of salt. Stir well to combine all ingredients.
- Fold in the sliced strawberries, reserving a few for topping.
- Divide the mixture evenly into two jars or containers with lids.
- Seal the jars and refrigerate overnight, or for at least 4 hours, to allow the oats to soak and soften.
- Before serving, give the oats a good stir and top with the reserved strawberries. Enjoy cold or warm them in the microwave for 30 seconds if desired.
Notes
- For added crunch, sprinkle some chopped nuts or granola on top before serving.
- Substitute the strawberries with other berries like blueberries or raspberries for a different flavor profile.
