A delicious twist on traditional overnight oats featuring strawberries and balsamic vinegar.


Ingredients

  • 1 cup rolled oats
  • 1 cup unsweetened almond milk (or any milk of choice)
  • 1 tablespoon chia seeds
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, hulled and sliced
  • Pinch of salt

Instructions

  1. In a medium bowl, combine rolled oats, almond milk, chia seeds, balsamic vinegar, honey (or maple syrup), vanilla extract, and a pinch of salt. Stir well to combine all ingredients.
  2. Fold in the sliced strawberries, reserving a few for topping.
  3. Divide the mixture evenly into two jars or containers with lids.
  4. Seal the jars and refrigerate overnight, or for at least 4 hours, to allow the oats to soak and soften.
  5. Before serving, give the oats a good stir and top with the reserved strawberries. Enjoy cold or warm them in the microwave for 30 seconds if desired.

Notes
