- 2 cups mixed berries (fresh or frozen, such as blueberries, strawberries, and raspberries)
- 1 tablespoon lemon juice
- 2 tablespoons granulated sugar
- 1 teaspoon cornstarch
- 1 teaspoon vanilla extract
- 1 cup rolled oats
- 1/2 cup all-purpose flour
- 1/2 cup brown sugar, packed
- 1/4 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/2 cup unsalted butter, melted
Instructions
- In a medium bowl, combine the mixed berries, lemon juice, granulated sugar, cornstarch, and vanilla extract. Stir gently to coat the berries and set aside.
- In another bowl, mix together the rolled oats, flour, brown sugar, salt, and cinnamon. Pour in the melted butter and stir until the mixture is crumbly and well combined.
- In a large skillet over medium heat, add the berry mixture and cook for about 5-7 minutes, stirring occasionally, until the berries start to bubble and thicken.
- Sprinkle the streusel mixture evenly over the berries in the skillet. Cover and reduce the heat to low. Cook for an additional 10-15 minutes, or until the streusel is golden brown and the berries are bubbly.
- Remove from heat and let cool for a few minutes before serving.
Notes
- For a nutty flavor, add 1/4 cup chopped nuts (such as walnuts or pecans) to the streusel mixture.
- For a touch of extra sweetness, serve with a scoop of vanilla ice cream or whipped cream on top.
