Ingredients

  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup coconut milk
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup shredded sweetened coconut
  • For the sticky glaze:
  • 1/2 cup granulated sugar
  • 1/4 cup water
  • 1/2 cup coconut milk

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In another bowl, combine the coconut milk, melted butter, eggs, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Fold in the shredded coconut.
  5. Pour the batter into the prepared baking pan and spread it evenly.
  6. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  7. While the cake is baking, prepare the sticky glaze by combining the sugar, water, and coconut milk in a small saucepan. Bring to a boil over medium heat, stirring until the sugar dissolves.
  8. Reduce the heat and let it simmer for about 5 minutes until slightly thickened.
  9. Once the cake is done, remove it from the oven and immediately poke holes all over the top using a skewer or fork.
  10. Pour the sticky glaze over the hot cake, allowing it to soak in.
  11. Let the cake cool in the pan for at least 15 minutes before serving.

  • For a tropical twist, add 1/2 cup of crushed pineapple to the batter.
