Instructions

  1. Remove the filet mignon from the refrigerator and let it sit at room temperature for about 30 minutes before cooking.
  2. Preheat your oven to 400°F.
  3. Season both sides of the steaks generously with salt and freshly ground black pepper.
  4. In a large oven-safe skillet, heat the olive oil over medium-high heat until shimmering.
  5. Carefully place the filet mignon in the skillet and sear for 3-4 minutes on each side until a golden-brown crust forms.
  6. Add the butter, smashed garlic, and thyme to the skillet. As the butter melts, tilt the skillet slightly and use a spoon to baste the steaks with the melted butter for about 1-2 minutes.
  7. Transfer the skillet to the preheated oven and roast the steaks for an additional 5-7 minutes for medium-rare, or until they reach your desired doneness.
  8. Remove the skillet from the oven and let the steaks rest for 5 minutes before serving.
