Instructions
- Remove the filet mignon from the refrigerator and let it sit at room temperature for about 30 minutes before cooking.
- Preheat your oven to 400°F.
- Season both sides of the steaks generously with salt and freshly ground black pepper.
- In a large oven-safe skillet, heat the olive oil over medium-high heat until shimmering.
- Carefully place the filet mignon in the skillet and sear for 3-4 minutes on each side until a golden-brown crust forms.
- Add the butter, smashed garlic, and thyme to the skillet. As the butter melts, tilt the skillet slightly and use a spoon to baste the steaks with the melted butter for about 1-2 minutes.

- Remove the skillet from the oven and let the steaks rest for 5 minutes before serving.
