- 1 cup crushed hard candies (such as Jolly Ranchers or Life Savers)
Instructions
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
- Beat in the egg, vanilla extract, and almond extract until well combined.
- Gradually add the flour mixture to the wet ingredients, mixing until just combined.
- Divide the dough into two equal portions, flatten each into a disk, wrap in plastic wrap, and refrigerate for at least 1 hour.
- Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
- On a lightly floured surface, roll out one disk of dough to about ¼ inch thick. Use cookie cutters to cut out shapes.
- Use a smaller cookie cutter to cut out the center of each shape, creating a window for the candy.
- Place the cookies on the prepared baking sheets and fill the centers with crushed hard candies.
- Bake for 8-10 minutes, or until the edges are lightly golden and the candy is melted.
- Allow the cookies to cool on the baking sheets for 5 minutes before transferring to wire racks to cool completely.
