  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 1 cup crushed hard candies (such as Jolly Ranchers or Life Savers)

Instructions

  1. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
  3. Beat in the egg, vanilla extract, and almond extract until well combined.
  4. Gradually add the flour mixture to the wet ingredients, mixing until just combined.
  5. Divide the dough into two equal portions, flatten each into a disk, wrap in plastic wrap, and refrigerate for at least 1 hour.
  6. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  7. On a lightly floured surface, roll out one disk of dough to about ¼ inch thick. Use cookie cutters to cut out shapes.
  8. Use a smaller cookie cutter to cut out the center of each shape, creating a window for the candy.
  9. Place the cookies on the prepared baking sheets and fill the centers with crushed hard candies.
  10. Bake for 8-10 minutes, or until the edges are lightly golden and the candy is melted.
  11. Allow the cookies to cool on the baking sheets for 5 minutes before transferring to wire racks to cool completely.
