  • 1 cup mixed vegetables (carrots, bell peppers, peas, chopped)
  • 2 tablespoons soy sauce
  • 1 tablespoon curry powder
  • 1 teaspoon salt (adjust to taste)
  • 1/2 teaspoon black pepper
  • 2 green onions, chopped
  • 1/4 cup fresh cilantro, chopped (optional)
  • 1 tablespoon lime juice

Instructions

  1. Chop the roti into small squares and set them aside.
  2. In a large skillet or wok, heat the vegetable oil over medium heat.
  3. Add the sliced onion and sauté until soft and translucent, about 3-4 minutes.
  4. Incorporate the minced garlic, grated ginger, and finely chopped green chili, cooking for another 1-2 minutes until aromatic.
  5. Toss in the mixed vegetables and stir-fry for roughly 5 minutes, ensuring they remain crisp yet tender.
  6. Sprinkle the curry powder, salt, and black pepper over the vegetables, mixing thoroughly.
  7. Add the chopped roti and pour in the soy sauce, tossing everything together until the roti is warmed and coated in the spice mixture, about 3-4 minutes.
  8. Remove from heat and fold in the chopped green onions, cilantro (if desired), and lime juice, mixing well before serving.
