- 2 large roti (store-bought or homemade, about 8 ounces each)
- 2 tablespoons vegetable oil
- 1 medium onion, thinly sliced
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- 1 green chili, finely chopped (adjust to taste)
- 1 cup mixed vegetables (carrots, bell peppers, peas, chopped)
- 2 tablespoons soy sauce
- 1 tablespoon curry powder
- 1 teaspoon salt (adjust to taste)
- 1/2 teaspoon black pepper
- 2 green onions, chopped
- 1/4 cup fresh cilantro, chopped (optional)
- 1 tablespoon lime juice
Instructions
- Chop the roti into small squares and set them aside.
- In a large skillet or wok, heat the vegetable oil over medium heat.
- Add the sliced onion and sauté until soft and translucent, about 3-4 minutes.
- Incorporate the minced garlic, grated ginger, and finely chopped green chili, cooking for another 1-2 minutes until aromatic.
- Toss in the mixed vegetables and stir-fry for roughly 5 minutes, ensuring they remain crisp yet tender.
- Sprinkle the curry powder, salt, and black pepper over the vegetables, mixing thoroughly.
- Add the chopped roti and pour in the soy sauce, tossing everything together until the roti is warmed and coated in the spice mixture, about 3-4 minutes.
- Remove from heat and fold in the chopped green onions, cilantro (if desired), and lime juice, mixing well before serving.
