Ingredients

  • 1 pound ground lamb
  • 1 tablespoon extra virgin olive oil
  • 1 medium onion, finely diced
  • 2 cloves garlic, minced
  • 1 cup diced carrots
  • 1 cup peas (fresh or frozen)
  • 1 teaspoon chopped fresh rosemary
  • 1 teaspoon chopped fresh thyme
  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon tomato paste
  • 1 package (14 ounces) refrigerated pie crusts (2 crusts)
  • 1 egg, beaten (for egg wash)

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the diced onion and sauté until it becomes soft and translucent, approximately 5 minutes. Incorporate the minced garlic and continue to cook for an additional minute until fragrant.
  2. Introduce the ground lamb to the skillet, using a wooden spoon to break it apart. Cook until the lamb is browned and fully cooked through, about 5-7 minutes. If there’s excess fat, drain it off.
  3. Mix in the diced carrots, peas, rosemary, thyme, sea salt, black pepper, Worcestershire sauce, and tomato paste. Stir well and let it simmer for another 5 minutes until the vegetables soften. Remove from heat and let the filling cool for a bit.
  4. Roll out one of the pie crusts and cut it into circles, roughly 6 inches in diameter, yielding about 6 circles from one crust.
  5. Spoon approximately 1/4 cup of the lamb filling onto the center of each circle. Fold the crust over to form a half-moon shape and use a fork to crimp the edges securely.
  6. Arrange the turnovers on a baking sheet lined with parchment paper. Brush the tops with the beaten egg to achieve a beautiful golden color.
  7. Bake in the preheated oven for 25-30 minutes, or until the turnovers are golden brown and flaky.
  8. Let them cool for a few minutes before serving warm.

Notes

  • For added heat, consider mixing in a pinch of red pepper flakes with the lamb filling.
  • You can swap out the ground lamb for ground beef or turkey, or even create a blend of different meats for a unique flavor profile.
