- 1 pound ground lamb
- 1 tablespoon extra virgin olive oil
- 1 medium onion, finely diced
- 2 cloves garlic, minced
- 1 cup diced carrots
- 1 cup peas (fresh or frozen)
- 1 teaspoon chopped fresh rosemary
- 1 teaspoon chopped fresh thyme
- 1 teaspoon sea salt
- 1/2 teaspoon freshly ground black pepper
- 1 tablespoon Worcestershire sauce
- 1 tablespoon tomato paste
- 1 package (14 ounces) refrigerated pie crusts (2 crusts)
- 1 egg, beaten (for egg wash)
Instructions
- Heat the olive oil in a large skillet over medium heat. Add the diced onion and sauté until it becomes soft and translucent, approximately 5 minutes. Incorporate the minced garlic and continue to cook for an additional minute until fragrant.
- Introduce the ground lamb to the skillet, using a wooden spoon to break it apart. Cook until the lamb is browned and fully cooked through, about 5-7 minutes. If there’s excess fat, drain it off.
- Mix in the diced carrots, peas, rosemary, thyme, sea salt, black pepper, Worcestershire sauce, and tomato paste. Stir well and let it simmer for another 5 minutes until the vegetables soften. Remove from heat and let the filling cool for a bit.
- Roll out one of the pie crusts and cut it into circles, roughly 6 inches in diameter, yielding about 6 circles from one crust.
- Spoon approximately 1/4 cup of the lamb filling onto the center of each circle. Fold the crust over to form a half-moon shape and use a fork to crimp the edges securely.
- Arrange the turnovers on a baking sheet lined with parchment paper. Brush the tops with the beaten egg to achieve a beautiful golden color.
- Bake in the preheated oven for 25-30 minutes, or until the turnovers are golden brown and flaky.
- Let them cool for a few minutes before serving warm.
Notes
- For added heat, consider mixing in a pinch of red pepper flakes with the lamb filling.
- You can swap out the ground lamb for ground beef or turkey, or even create a blend of different meats for a unique flavor profile.
