  • 1 cup shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 1 cup canned artichoke hearts, drained and chopped
  • 2 cups fresh spinach, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/4 cup heavy cream
  • 2 tablespoons olive oil

Instructions

  1. Begin by steaming the cauliflower florets until tender, about 8-10 minutes. Once cooked, drain and let cool slightly. Then, blend the cauliflower in a food processor until it reaches a smooth, pasta-like consistency. Set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Stir in the chopped artichoke hearts and spinach, cooking until the spinach wilts, about 2-3 minutes.
  4. Lower the heat and add the cream cheese, heavy cream, mozzarella cheese, and Parmesan cheese to the skillet. Stir until the cheeses melt and the mixture becomes creamy.
  5. Add the cauliflower ‘pasta’ to the skillet, mixing well to combine. Season with onion powder, garlic powder, salt, black pepper, and red pepper flakes if using. Cook for an additional 2-3 minutes until heated through.
  6. Serve immediately, garnished with extra Parmesan cheese if desired.
