A flavorful and spicy soup made with sweet potatoes and tamarind, perfect for a comforting meal.

- 2 medium sweet potatoes, peeled and diced (about 2 cups)
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon cayenne pepper (adjust to taste)
- 4 cups vegetable broth
- 1/4 cup tamarind paste
- 1 tablespoon lime juice
- Salt and pepper to taste
- Fresh cilantro, for garnish
- Sour cream or yogurt, for serving (optional)
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and grated ginger, cooking for an additional 1-2 minutes until fragrant.
- Add the diced sweet potatoes, ground cumin, ground coriander, and cayenne pepper. Stir to combine and cook for another 2-3 minutes.
- Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat and let it simmer for about 20 minutes, or until the sweet potatoes are tender.
- Remove the pot from heat and stir in the tamarind paste and lime juice. Use an immersion blender to puree the soup until smooth. If you don’t have an immersion blender, carefully transfer the soup in batches to a countertop blender.
- Season with salt and pepper to taste. If the soup is too thick, add a little more broth or water to reach your desired consistency.
- Serve hot, garnished with fresh cilantro and a dollop of sour cream or yogurt if desired.
Notes
- For a creamier texture, add 1/2 cup of coconut milk during the blending step.
- To enhance the flavor, consider adding a dash of smoked paprika or a squeeze of orange juice for a citrus twist.
