- 1 pound large shrimp, peeled and deveined
- 2 tablespoons olive oil
- 1 medium onion, finely chopped
- 4 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon cayenne pepper (adjust to taste)
- 1 can (14.5 ounces) diced tomatoes, drained
- 1/2 cup chicken broth
- 1 tablespoon lemon juice
- Salt and pepper to taste
- 1/4 cup fresh parsley, chopped
- Lemon wedges for serving
Instructions
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and grated ginger, cooking for another minute until fragrant.
- Add the ground cumin, smoked paprika, and cayenne pepper. Stir well and cook for 1-2 minutes to toast the spices.
- Pour in the drained diced tomatoes and chicken broth. Bring the mixture to a simmer and let it cook for about 5 minutes.
- Add the shrimp to the skillet, stirring to coat them in the sauce. Cook for 3-5 minutes, or until the shrimp are pink and opaque.
- Stir in the lemon juice and season with salt and pepper to taste.
- Remove from heat and garnish with chopped parsley. Serve with lemon wedges on the side.
Notes
- For a creamier sauce, stir in 1/4 cup of coconut milk just before adding the shrimp.
- Serve over rice or quinoa to soak up the delicious sauce, or pair with crusty bread for dipping.
