Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • 1 can (14.5 ounces) diced tomatoes, drained
  • 1/2 cup chicken broth
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • 1/4 cup fresh parsley, chopped
  • Lemon wedges for serving

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Stir in the minced garlic and grated ginger, cooking for another minute until fragrant.
  3. Add the ground cumin, smoked paprika, and cayenne pepper. Stir well and cook for 1-2 minutes to toast the spices.
  4. Pour in the drained diced tomatoes and chicken broth. Bring the mixture to a simmer and let it cook for about 5 minutes.
  5. Add the shrimp to the skillet, stirring to coat them in the sauce. Cook for 3-5 minutes, or until the shrimp are pink and opaque.
  6. Stir in the lemon juice and season with salt and pepper to taste.
  7. Remove from heat and garnish with chopped parsley. Serve with lemon wedges on the side.

Notes

  • For a creamier sauce, stir in 1/4 cup of coconut milk just before adding the shrimp.
  • Serve over rice or quinoa to soak up the delicious sauce, or pair with crusty bread for dipping.
