- 2 (6-ounce) salmon fillets
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon cayenne pepper
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1/2 cup mixed nuts (such as almonds, walnuts, and pecans), chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup red onion, finely diced
- 1 tablespoon lemon juice
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F and line a baking sheet with parchment paper.
- In a small bowl, mix together the olive oil, smoked paprika, cayenne pepper, garlic powder, salt, and pepper.
- Rub this mixture over the salmon fillets.
- Place the salmon fillets on the prepared baking sheet and bake for 12-15 minutes, or until the salmon flakes easily with a fork.
- While the salmon is baking, prepare the nut salsa by combining the chopped nuts, parsley, red onion, lemon juice, olive oil, salt, and pepper in a medium bowl.
- Once the salmon is done, remove it from the oven and let it rest for a couple of minutes.
- Serve the salmon topped with the nut salsa.
Notes
- For added flavor, consider marinating the salmon in the spice mixture for 30 minutes before baking.
- You can substitute the mixed nuts with your favorite nuts or seeds for a different texture and taste.
