Ingredients

  • 2 (6-ounce) salmon fillets
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon cayenne pepper
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/2 cup mixed nuts (such as almonds, walnuts, and pecans), chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup red onion, finely diced
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. In a small bowl, mix together the olive oil, smoked paprika, cayenne pepper, garlic powder, salt, and pepper.
  3. Rub this mixture over the salmon fillets.
  4. Place the salmon fillets on the prepared baking sheet and bake for 12-15 minutes, or until the salmon flakes easily with a fork.
  5. While the salmon is baking, prepare the nut salsa by combining the chopped nuts, parsley, red onion, lemon juice, olive oil, salt, and pepper in a medium bowl.
  6. Once the salmon is done, remove it from the oven and let it rest for a couple of minutes.
  7. Serve the salmon topped with the nut salsa.

Notes

  • For added flavor, consider marinating the salmon in the spice mixture for 30 minutes before baking.
  • You can substitute the mixed nuts with your favorite nuts or seeds for a different texture and taste.
