Description
A vibrant and flavorful salsa made with fresh mango, pineapple, and served with crispy plantain chips.
Ingredients

- 2 ripe mangoes, diced
- 1 cup fresh pineapple, diced
- 1/2 red onion, finely chopped
- 1 jalapeño, seeded and minced
- 1/4 cup fresh cilantro, chopped
- Juice of 2 limes
- Salt to taste
- 2 large plantains, sliced
- Oil for frying
Instructions
- In a large bowl, combine the diced mangoes, pineapple, red onion, jalapeño, and cilantro.
- Drizzle with lime juice and season with salt. Mix well and set aside to let the flavors meld.
- In a frying pan, heat oil over medium heat.
- Fry the plantain slices until golden brown and crispy, about 3-4 minutes on each side.
- Remove the plantains from the oil and drain on paper towels.
- Serve the salsa with the crispy plantain chips.
Notes
- Adjust the spiciness by adding more or less jalapeño.
- For a sweeter salsa, use very ripe mangoes.
- Plantain chips can also be baked for a healthier option.
