Description

A vibrant and flavorful salsa made with fresh mango, pineapple, and served with crispy plantain chips.


Ingredients

  • 2 ripe mangoes, diced
  • 1 cup fresh pineapple, diced
  • 1/2 red onion, finely chopped
  • 1 jalapeño, seeded and minced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes
  • Salt to taste
  • 2 large plantains, sliced
  • Oil for frying

Instructions

  1. In a large bowl, combine the diced mangoes, pineapple, red onion, jalapeño, and cilantro.
  2. Drizzle with lime juice and season with salt. Mix well and set aside to let the flavors meld.
  3. In a frying pan, heat oil over medium heat.
  4. Fry the plantain slices until golden brown and crispy, about 3-4 minutes on each side.
  5. Remove the plantains from the oil and drain on paper towels.
  6. Serve the salsa with the crispy plantain chips.

Notes

  • Adjust the spiciness by adding more or less jalapeño.
  • For a sweeter salsa, use very ripe mangoes.
  • Plantain chips can also be baked for a healthier option.
