Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon vegetable oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup snap peas, trimmed
  • 1 ripe mango, peeled and diced
  • 1/2 cup unsalted cashews
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1/4 cup soy sauce
  • 1 tablespoon honey
  • 1 tablespoon sriracha (adjust to taste)
  • 1 teaspoon cornstarch mixed with 1 tablespoon water
  • Cooked rice or quinoa, for serving

Instructions

  1. Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the chicken pieces and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  2. In the same skillet, add the garlic and ginger, sautéing for about 30 seconds until fragrant.
  3. Add the sliced bell peppers and snap peas to the skillet. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
  4. Return the cooked chicken to the skillet. Add the diced mango, cashews, soy sauce, honey, and sriracha. Stir to combine and cook for another 2-3 minutes.
  5. Stir in the cornstarch mixture to thicken the sauce, cooking for an additional minute until the sauce is glossy and coats the chicken and vegetables.
  6. Serve the stir-fry over cooked rice or quinoa.

Notes

  • For extra heat, add sliced jalapeños or a pinch of red pepper flakes when cooking the vegetables.
  • Substitute the chicken with shrimp or tofu for a different protein option, adjusting cooking times as necessary.
