- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 tablespoon vegetable oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup snap peas, trimmed
- 1 ripe mango, peeled and diced
- 1/2 cup unsalted cashews
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1/4 cup soy sauce
- 1 tablespoon honey
- 1 tablespoon sriracha (adjust to taste)
- 1 teaspoon cornstarch mixed with 1 tablespoon water
- Cooked rice or quinoa, for serving
Instructions
- Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the chicken pieces and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
- In the same skillet, add the garlic and ginger, sautéing for about 30 seconds until fragrant.
- Add the sliced bell peppers and snap peas to the skillet. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
- Return the cooked chicken to the skillet. Add the diced mango, cashews, soy sauce, honey, and sriracha. Stir to combine and cook for another 2-3 minutes.
- Stir in the cornstarch mixture to thicken the sauce, cooking for an additional minute until the sauce is glossy and coats the chicken and vegetables.
- Serve the stir-fry over cooked rice or quinoa.
Notes
- For extra heat, add sliced jalapeños or a pinch of red pepper flakes when cooking the vegetables.
- Substitute the chicken with shrimp or tofu for a different protein option, adjusting cooking times as necessary.
