  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes, no salt added
  • 1 can (6 ounces) tomato paste
  • 1 cup beef broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 can (15 ounces) kidney beans, drained and rinsed (optional for strict keto)
  • 2 tablespoons olive oil
  • 1/4 cup chopped fresh cilantro (for garnish)
  • 1 jalapeño, diced (optional for extra heat)

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Add the ground beef to the pot, breaking it apart with a spoon. Cook until browned, about 7-10 minutes.
  5. Drain excess fat if necessary.
  6. Stir in the diced tomatoes, tomato paste, and beef broth.
  7. Add the chili powder, cumin, smoked paprika, cayenne pepper, salt, and black pepper. Mix well to combine.
  8. If using, add the kidney beans to the pot and stir.
  9. Bring the mixture to a simmer, then reduce the heat to low.
  10. Cover and let it cook for 30-40 minutes, stirring occasionally.
  11. For a thicker chili, simmer uncovered for the last 10 minutes.
  12. Taste and adjust seasoning as needed.
  13. If you prefer more heat, add the diced jalapeño during the last 10 minutes of cooking.
  14. Serve hot, garnished with fresh cilantro.
