- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 can (14.5 ounces) diced tomatoes, no salt added
- 1 can (6 ounces) tomato paste
- 1 cup beef broth
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon cayenne pepper (adjust to taste)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 can (15 ounces) kidney beans, drained and rinsed (optional for strict keto)
- 2 tablespoons olive oil
- 1/4 cup chopped fresh cilantro (for garnish)
- 1 jalapeño, diced (optional for extra heat)
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the diced onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the ground beef to the pot, breaking it apart with a spoon. Cook until browned, about 7-10 minutes.
- Drain excess fat if necessary.
- Stir in the diced tomatoes, tomato paste, and beef broth.
- Add the chili powder, cumin, smoked paprika, cayenne pepper, salt, and black pepper. Mix well to combine.
- If using, add the kidney beans to the pot and stir.
- Bring the mixture to a simmer, then reduce the heat to low.
- Cover and let it cook for 30-40 minutes, stirring occasionally.
- For a thicker chili, simmer uncovered for the last 10 minutes.
- Taste and adjust seasoning as needed.
- If you prefer more heat, add the diced jalapeño during the last 10 minutes of cooking.
- Serve hot, garnished with fresh cilantro.

- For a smoky flavor, consider adding a few drops of liquid smoke or diced smoked sausage.
- To make it vegetarian, substitute the ground beef with a mix of mushrooms and bell peppers, and use vegetable broth instead of beef broth.
