A delicious and spicy stir-fry featuring eggplant and ground turkey, perfect for a quick dinner.

- 2 medium eggplants, diced into 1-inch cubes
- 1 pound ground turkey
- 2 tablespoons vegetable oil
- 4 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 3 green onions, chopped
- 2 tablespoons soy sauce
- 1 tablespoon hoisin sauce
- 1 tablespoon sriracha (adjust to taste)
- 1 teaspoon sesame oil
- Salt and pepper to taste
- Cooked jasmine rice, for serving
Instructions
- Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the ground turkey and cook until browned, breaking it apart with a spatula, about 5-7 minutes. Season with salt and pepper. Remove from the skillet and set aside.
- In the same skillet, add the minced garlic and ginger. Sauté for about 30 seconds until fragrant.
- Add the diced eggplant to the skillet and stir-fry for about 5 minutes, or until it starts to soften. If the eggplant absorbs too much oil, add a splash of water to help it cook.
- Add the sliced red and green bell peppers to the skillet. Stir-fry for another 3-4 minutes until the peppers are tender-crisp.
- Return the cooked ground turkey to the skillet. Stir in the soy sauce, hoisin sauce, sriracha, and sesame oil. Mix well and cook for an additional 2-3 minutes until everything is heated through.
- Remove from heat and stir in the chopped green onions. Taste and adjust seasoning if necessary.
- Serve the stir-fry over cooked jasmine rice.
Notes
- For a vegetarian option, substitute ground turkey with crumbled firm tofu or tempeh.
- Add a tablespoon of peanut butter to the sauce for a creamier texture and nutty flavor.
