Description

A delicious and spicy stir-fry featuring eggplant and ground turkey, perfect for a quick dinner.


Ingredients

  • 2 medium eggplants, diced into 1-inch cubes
  • 1 pound ground turkey
  • 2 tablespoons vegetable oil
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 3 green onions, chopped
  • 2 tablespoons soy sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon sriracha (adjust to taste)
  • 1 teaspoon sesame oil
  • Salt and pepper to taste
  • Cooked jasmine rice, for serving

Instructions

  1. Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the ground turkey and cook until browned, breaking it apart with a spatula, about 5-7 minutes. Season with salt and pepper. Remove from the skillet and set aside.
  2. In the same skillet, add the minced garlic and ginger. Sauté for about 30 seconds until fragrant.
  3. Add the diced eggplant to the skillet and stir-fry for about 5 minutes, or until it starts to soften. If the eggplant absorbs too much oil, add a splash of water to help it cook.
  4. Add the sliced red and green bell peppers to the skillet. Stir-fry for another 3-4 minutes until the peppers are tender-crisp.
  5. Return the cooked ground turkey to the skillet. Stir in the soy sauce, hoisin sauce, sriracha, and sesame oil. Mix well and cook for an additional 2-3 minutes until everything is heated through.
  6. Remove from heat and stir in the chopped green onions. Taste and adjust seasoning if necessary.
  7. Serve the stir-fry over cooked jasmine rice.

Notes

  • For a vegetarian option, substitute ground turkey with crumbled firm tofu or tempeh.
  • Add a tablespoon of peanut butter to the sauce for a creamier texture and nutty flavor.
