- 2 tablespoons vegetable oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 4 cups chicken broth
- 1 cup water
- 2 tablespoons soy sauce
- 1 tablespoon sriracha (adjust to taste)
- 1 teaspoon sesame oil
- 1 cup baby bok choy, chopped
- 1 cup mushrooms, sliced
- 1 cup carrots, julienned
- 1 package (12 ounces) frozen dumplings (pork, chicken, or vegetable)
- 2 green onions, sliced
- 1 tablespoon fresh cilantro, chopped (optional)
- Salt and pepper to taste
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and grated ginger, cooking for an additional minute until fragrant.
- Pour in the chicken broth and water, then add the soy sauce, sriracha, and sesame oil. Bring the mixture to a simmer.
- Add the chopped bok choy, sliced mushrooms, and julienned carrots to the pot. Let it simmer for about 5 minutes until the vegetables are tender.
- Gently add the frozen dumplings to the soup and cook according to the package instructions, usually about 5-7 minutes.
- Taste the soup and season with salt and pepper as needed.
- Serve hot, garnished with sliced green onions and fresh cilantro if desired.
Notes
- For a vegetarian version, use vegetable broth and vegetable dumplings.
- Add a squeeze of lime juice before serving for an extra zing.
