Ingredients

  • 2 cups cucumber, diced
  • 2 cups melon, diced
  • 1/4 cup red onion, finely chopped
  • 1 jalapeño, seeded and minced
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons lime juice
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the diced cucumber and melon.
  2. Add the finely chopped red onion and minced jalapeño.
  3. Stir in the chopped cilantro.
  4. In a small bowl, whisk together the lime juice and olive oil.
  5. Pour the dressing over the salad and toss to combine.
  6. Season with salt and pepper to taste.
  7. Chill in the refrigerator for at least 30 minutes before serving.

Notes

  • Adjust the spiciness by adding more or less jalapeño.
  • For a sweeter salad, use ripe melon.
