A refreshing and spicy twist on a classic salad featuring cucumbers and melons.
Ingredients

- 2 cups cucumber, diced
- 2 cups melon, diced
- 1/4 cup red onion, finely chopped
- 1 jalapeño, seeded and minced
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons lime juice
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- In a large bowl, combine the diced cucumber and melon.
- Add the finely chopped red onion and minced jalapeño.
- Stir in the chopped cilantro.
- In a small bowl, whisk together the lime juice and olive oil.
- Pour the dressing over the salad and toss to combine.
- Season with salt and pepper to taste.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- Adjust the spiciness by adding more or less jalapeño.
- For a sweeter salad, use ripe melon.
