- 2 pounds chicken thighs, bone-in and skin-on
- 1 cup plum preserves
- 2 tablespoons soy sauce
- 1 tablespoon apple cider vinegar
- 1 teaspoon ground ginger
- 1 teaspoon garlic powder
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- ½ teaspoon black pepper
- 1 teaspoon salt
- 2 tablespoons olive oil
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- In a medium bowl, combine the plum preserves, soy sauce, apple cider vinegar, ground ginger, garlic powder, ground cinnamon, ground nutmeg, black pepper, and salt. Mix well until smooth.
- In a large oven-safe skillet, heat the olive oil over medium-high heat. Add the chicken thighs, skin-side down, and sear for about 5-7 minutes until the skin is golden brown.
- Flip the chicken thighs over and pour the plum glaze over the top, ensuring they are well coated.
- Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
- Remove the skillet from the oven and let the chicken rest for 5 minutes before serving. Garnish with chopped fresh parsley.
Notes
- For a spicier kick, add 1 teaspoon of red pepper flakes to the glaze.
- Serve the chicken over a bed of rice or quinoa to soak up the delicious glaze.
