- 3 ripe bananas, mashed
- 1/3 cup melted coconut oil
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1 large egg, beaten
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda

- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1 1/2 cups all-purpose flour
- 1/2 cup chopped walnuts or pecans (optional)
- 1/2 cup dried cranberries or raisins (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
- In a large bowl, mix the mashed bananas and melted coconut oil until well combined.
- Stir in the brown sugar and granulated sugar until fully incorporated.
- Add the beaten egg and vanilla extract, mixing until smooth.
- In a separate bowl, combine the baking soda, salt, cinnamon, nutmeg, and ginger.
- Gradually add the dry mixture to the banana mixture, stirring just until combined. Do not overmix.
- Fold in the flour until just incorporated, then add the nuts and dried fruit if using.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 60-65 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Notes
- For a festive touch, sprinkle some coarse sugar on top of the batter before baking for a crunchy crust.
- Substitute half of the all-purpose flour with whole wheat flour for a healthier option.
