- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- ½ cup packed brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 teaspoon almond extract
- ½ cup granulated sugar (for rolling)
- ½ cup colored sugar sprinkles (for decoration)
Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 3-4 minutes.
- Beat in the egg, vanilla extract, and almond extract until well combined.
- Gradually add the flour mixture to the wet ingredients, mixing until just combined. Do not overmix.
- Scoop tablespoon-sized portions of dough and roll them into balls.
- Roll each ball in granulated sugar, then in colored sugar sprinkles, ensuring they are well coated.
- Place the coated dough balls on the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are lightly golden. The centers may look slightly underbaked; they will firm up as they cool.
- Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to wire racks to cool completely.
Notes
- For a chocolate version, replace ½ cup of flour with unsweetened cocoa powder.
- Add ½ cup of chopped nuts or chocolate chips to the dough for extra texture and flavor.
