Instructions

  1. Begin by boiling a large pot of salted water and cook the penne pasta until al dente, according to the package instructions. Once cooked, drain the pasta, reserving about 1/2 cup of the pasta water for later use. Set the pasta aside.
  2. In a large skillet, warm the extra virgin olive oil over medium heat. Add the diced onion and sauté for approximately 5 minutes until it becomes translucent and tender.
  3. Introduce the minced garlic to the skillet and sauté for an additional minute, allowing the garlic to release its aroma.
  4. Incorporate the pumpkin puree, vodka, crushed red pepper flakes, and dried oregano into the skillet. Mix thoroughly and let the mixture simmer for about 5 minutes to evaporate the alcohol.
  5. Next, pour in the heavy whipping cream, stirring until everything is well blended. Allow the sauce to simmer for an additional 5 to 7 minutes, stirring occasionally, until it thickens to your liking.
  6. Season the sauce with salt and freshly ground black pepper. If the sauce appears too thick, gradually add the reserved pasta water until you reach your desired consistency.
  7. Toss the cooked penne into the sauce, ensuring each piece is well coated. Stir in the freshly grated Parmesan cheese until it melts and is evenly distributed throughout the dish.
