Description

A delicious twist on dinner featuring spaghetti squash as a crust.


Ingredients

  • 2 cups cooked spaghetti squash, shredded
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup marinara sauce (sugar-free)
  • 1/2 pound ground beef or Italian sausage, cooked and crumbled
  • 1/2 cup sliced black olives (optional)
  • Fresh basil leaves for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine the cooked spaghetti squash, mozzarella cheese, Parmesan cheese, eggs, garlic powder, Italian seasoning, salt, and black pepper. Mix until well combined.
  3. Grease a 9-inch pie dish or a round baking dish with cooking spray or olive oil. Press the spaghetti squash mixture into the bottom and up the sides of the dish to form a crust.
  4. Spread the cooked ground beef or sausage evenly over the crust. Pour the marinara sauce over the meat, spreading it out evenly. If using, sprinkle the sliced black olives on top.
  5. Bake in the preheated oven for 25-30 minutes, or until the edges are golden and the cheese is bubbly.
  6. Remove from the oven and let it cool for about 5 minutes before slicing. Garnish with fresh basil leaves if desired.

Notes

  • For added flavor, sauté diced onions and bell peppers with the ground meat before adding it to the pie.
  • Try adding cooked spinach or kale to the filling for extra nutrients and flavor.
