Ingredients

  • 1 teaspoon salt
  • 1/2 teaspoon ground nutmeg
  • 4 large eggs
  • 1/2 cup milk
  • 2 tablespoons unsalted butter, melted
  • 1/4 cup fresh parsley, chopped (optional)

Instructions

  1. In a large mixing bowl, combine the flour, salt, and nutmeg. Whisk together until well mixed.
  2. In a separate bowl, beat the eggs and then add the milk and melted butter. Mix until combined.
  3. Gradually add the egg mixture to the flour mixture, stirring until a thick batter forms. The batter should be slightly sticky but still pourable.
  4. Bring a large pot of salted water to a boil.
  5. Using a spaetzle maker or a colander with large holes, press the batter through into the boiling water. Alternatively, you can use a spoon to drop small amounts of batter into the water.
  6. Cook the dumplings for about 2-3 minutes or until they float to the surface. Remove them with a slotted spoon and transfer to a bowl.
  7. If desired, toss the cooked spaetzle with melted butter and chopped parsley for added flavor. Serve warm.

Notes

  • For a richer flavor, try adding grated cheese to the spaetzle while they are still warm.
  • You can also sauté the cooked dumplings in a pan with a little more butter until they are golden brown for a crispy texture.
