Instructions

  1. Char the corn: Preheat a grill or grill pan. Grill the corn for 8–10 minutes, turning occasionally until charred in spots. Let cool slightly, then cut kernels off the cob.
  2. Prepare the chili-honey drizzle: In a small bowl, whisk honey, chili powder, lime juice, and salt until combined.
  3. Assemble the salad: In a large bowl, combine corn kernels, bell pepper, onion, cherry tomatoes, avocado, and cilantro. Squeeze lime juice over, season with salt and pepper, and toss gently.
  4. Dress the salad: Drizzle the chili-honey mixture over the salad and toss again lightly.
