A refreshing Southwest lime-charred corn salad topped with a sweet and spicy chili-honey drizzle.
Ingredients

- 4 ears of corn, husked
- 1 red bell pepper, diced
- 1 small red onion, finely chopped
- 1 cup cherry tomatoes, halved
- 1 avocado, diced
- 1 handful fresh cilantro, chopped
- Juice of 2 limes
- Salt and pepper to taste
- 3 tbsp honey (for the drizzle)
- 1 tsp chili powder (adjust to heat preference)
- 1 tbsp lime juice (for the drizzle)
- Pinch of salt (for the drizzle)
Instructions
- Char the corn: Preheat a grill or grill pan. Grill the corn for 8–10 minutes, turning occasionally until charred in spots. Let cool slightly, then cut kernels off the cob.
- Prepare the chili-honey drizzle: In a small bowl, whisk honey, chili powder, lime juice, and salt until combined.
- Assemble the salad: In a large bowl, combine corn kernels, bell pepper, onion, cherry tomatoes, avocado, and cilantro. Squeeze lime juice over, season with salt and pepper, and toss gently.
- Dress the salad: Drizzle the chili-honey mixture over the salad and toss again lightly.

- Adjust the chili powder according to your heat preference.
- For a vegan version, substitute honey with agave syrup.
