  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/4 cup erythritol or preferred keto sweetener
  • 3 large eggs
  • 1/2 cup unsweetened applesauce
  • 1 teaspoon vanilla extract
  • 1 cup diced fresh peaches (or frozen, thawed and drained)
  • 1/2 cup chopped pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan or line it with parchment paper.
  2. In a large mixing bowl, combine the almond flour, baking powder, baking soda, salt, cinnamon, and erythritol. Mix well to ensure there are no lumps.
  3. In another bowl, whisk together the eggs, applesauce, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Gently fold in the diced peaches and chopped pecans, if using.
  6. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  7. Bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely before slicing.

Notes

  • For added flavor, consider mixing in a teaspoon of nutmeg or a tablespoon of lemon zest.
