- 2 cups heavy cream
- 1 cup whole milk
- 1/2 cup granulated sugar
- 2 tablespoons loose rooibos tea
- 1 teaspoon vanilla extract
- 2 1/2 teaspoons unflavored gelatin
- 3 tablespoons cold water
- Pinch of salt
Instructions
- Heat the heavy cream, whole milk, sugar, rooibos tea, and a pinch of salt in a medium saucepan over a gentle flame, stirring occasionally until warm.
- Remove from heat and let the rooibos steep for about 10 minutes.
- In a small bowl, sprinkle gelatin over cold water and let it sit for 5 minutes to soften.
- Strain the cream mixture through a fine sieve into another saucepan to remove tea leaves.
- Add the bloomed gelatin and vanilla extract to the warm mixture, stirring until dissolved and smooth.
- Pour the mixture into small cups or ramekins and let cool at room temperature.
- Cover with plastic wrap and refrigerate for at least 4 hours until set.
- To serve, run a knife around the edges and flip onto dessert plates, or serve in cups. Garnish with fresh berries or honey if desired.
Notes
- Ensure the cream mixture does not boil while heating.
- For best results, allow the panna cotta to chill overnight.
- Experiment with different garnishes like nuts or chocolate shavings.
