A delicious South African dish featuring curry served in hollowed bread rolls, known as Bunny Chow.

- 2 tablespoons curry spice blend
- 1 teaspoon cumin seeds

- 1 teaspoon ground turmeric
- 1 teaspoon cayenne pepper (adjust for heat preference)
- 1 can (14 ounces) crushed tomatoes
- 1 cup creamy coconut milk
- 1 cup chicken or vegetable stock
- Salt and freshly ground black pepper to taste
- 4 crusty bread rolls (like ciabatta or round sourdough)
- Chopped fresh cilantro, for garnish
Instructions
- Warm the olive oil in a large saucepan over medium heat.
- Add the chopped onion and sauté until soft and translucent, about 5 minutes.
- Incorporate the minced garlic and grated ginger, stirring for an additional minute.
- Add the diced chicken and cook until golden brown on all sides, roughly 5 to 7 minutes.
- Sprinkle in the curry spice blend, cumin seeds, coriander seeds, turmeric, and cayenne pepper, stirring to coat the chicken.
- Allow the spices to cook for about 2 minutes.
- Add the crushed tomatoes, creamy coconut milk, and stock to the pot, mixing everything together.
- Bring the mixture to a gentle simmer, then lower the heat and cover the saucepan.
- Cook for 25-30 minutes, stirring occasionally, until the chicken is tender and fully cooked.
- Season with salt and pepper to taste.
- Prepare the bread rolls by cutting off the tops and hollowing out the insides.
- Spoon the curry generously into the hollowed bread rolls and garnish with chopped cilantro before serving.
