Ingredients

Scale
  • 2 tablespoons olive oil
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon freshly grated ginger
  • 1 pound boneless chicken thighs, diced
  • 2 tablespoons curry spice blend
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander seeds
  • 1 teaspoon ground turmeric
  • 1 teaspoon cayenne pepper (adjust for heat preference)
  • 1 can (14 ounces) crushed tomatoes
  • 1 cup creamy coconut milk
  • 1 cup chicken or vegetable stock
  • Salt and freshly ground black pepper to taste
  • 4 crusty bread rolls (like ciabatta or round sourdough)
  • Chopped fresh cilantro, for garnish

Instructions

  1. Warm the olive oil in a large saucepan over medium heat.
  2. Add the chopped onion and sauté until soft and translucent, about 5 minutes.
  3. Incorporate the minced garlic and grated ginger, stirring for an additional minute.
  4. Add the diced chicken and cook until golden brown on all sides, roughly 5 to 7 minutes.
  5. Sprinkle in the curry spice blend, cumin seeds, coriander seeds, turmeric, and cayenne pepper, stirring to coat the chicken.
  6. Allow the spices to cook for about 2 minutes.
  7. Add the crushed tomatoes, creamy coconut milk, and stock to the pot, mixing everything together.
  8. Bring the mixture to a gentle simmer, then lower the heat and cover the saucepan.
  9. Cook for 25-30 minutes, stirring occasionally, until the chicken is tender and fully cooked.
  10. Season with salt and pepper to taste.
  11. Prepare the bread rolls by cutting off the tops and hollowing out the insides.
  12. Spoon the curry generously into the hollowed bread rolls and garnish with chopped cilantro before serving.

Notes

  • Adjust the cayenne pepper according to your heat preference.
  • Ensure the bread rolls are sturdy enough to hold the curry.
