Description

A delicious South African dish featuring bell peppers stuffed with a flavorful bobotie-inspired filling.


Ingredients

  • 1 pound minced beef or lamb
  • 1 medium onion, finely diced
  • 2 cloves garlic, crushed
  • 1 tablespoon curry spice blend
  • 1 teaspoon turmeric powder
  • 1 teaspoon cinnamon powder
  • 1 tablespoon brown sugar
  • 1 tablespoon soy sauce
  • 1 cup dried bread crumbs
  • 1 cup whole milk
  • 2 large eggs
  • Salt and pepper to taste
  • 4 large bell peppers (any color)
  • 1/4 cup dried raisins or sultanas
  • 1/4 cup chopped almonds (optional)
  • Fresh cilantro or parsley for garnish

Instructions

  1. Begin by heating your oven to 375°F.
  2. In a large frying pan over medium heat, add a splash of oil and sauté the diced onion until it turns soft and translucent, about 5 minutes. Stir in the crushed garlic and cook for an additional minute until aromatic.
  3. Introduce the minced beef or lamb into the pan, breaking it apart with a spoon. Cook until it is well browned, approximately 5-7 minutes, then drain any excess fat from the pan.
  4. Sprinkle in the curry spice blend, turmeric, cinnamon, brown sugar, soy sauce, and season with salt and pepper. Allow this mixture to cook for another 2 minutes to meld the flavors.
  5. Take the pan off the heat and fold in the bread crumbs and raisins. Allow the mixture to cool for a few minutes.
  6. In a separate bowl, beat together the milk and eggs. Add half of this mixture to the meat blend and stir until fully incorporated.
  7. Slice the tops off the bell peppers and remove the seeds. Arrange them upright in a baking dish.
  8. Generously fill each pepper with the meat mixture, pressing it down lightly to ensure they are well packed. Drizzle the remaining milk and egg mixture over the stuffed peppers.
  9. If desired, sprinkle the chopped almonds over the top of the peppers for added crunch.
  10. Cover the baking dish with aluminum foil and bake for 30 minutes. After that, remove the foil and continue baking for another 15 minutes, or until the peppers are tender and the tops are golden brown.
  11. Before serving, garnish with fresh cilantro or parsley for a burst of color and flavor.

Notes

  • Serves 4.
  • Feel free to use any color of bell peppers for a vibrant presentation.
  • Chopped almonds are optional but add a nice crunch.
