Description

A rich and creamy Soft Caramel Christmas Cheesecake with a graham cracker crust, perfect for festive celebrations.


Ingredients

  • 1 ½ cups graham cracker crumbs
  • ⅓ cup granulated sugar
  • ½ cup unsalted butter, melted
  • 24 ounces cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • ½ cup sour cream
  • ½ cup heavy cream
  • ½ cup caramel sauce (plus extra for drizzling)

Instructions

  1. Preheat the oven to 325°F (160°C). Grease a 9-inch springform pan.
  2. In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until well combined. Press the mixture firmly into the bottom of the prepared springform pan to form an even layer.
  3. In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy, about 2-3 minutes.
  4. Add the sugar and vanilla extract to the cream cheese, mixing until fully incorporated.
  5. Add the eggs one at a time, mixing on low speed after each addition until just combined. Do not overmix.
  6. Stir in the sour cream and heavy cream until smooth. Fold in the caramel sauce gently.
  7. Pour the cheesecake filling over the prepared crust, smoothing the top with a spatula.
  8. Bake in the preheated oven for 55-60 minutes, or until the edges are set and the center is slightly jiggly. Turn off the oven and leave the cheesecake inside for 1 hour to cool gradually.
  9. Remove the cheesecake from the oven and let it cool to room temperature. Refrigerate for at least 4 hours, preferably overnight.
  10. Before serving, drizzle additional caramel sauce over the top of the cheesecake.

Notes

  • For a festive touch, top the cheesecake with crushed peppermint candies or chocolate shavings before serving.
