Ingredients

  • 2 pounds pork belly, skin-on
  • 1 tablespoon kosher salt
  • 1 tablespoon black pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon paprika
  • 1 teaspoon cayenne pepper (optional)
  • 1 cup water
  • 1 tablespoon olive oil
  • 1 tablespoon white vinegar
  • 1 tablespoon baking soda
  • 1 tablespoon coarse sea salt (for crust)

Instructions

  1. Preheat your oven to 450°F.
  2. Score the skin of the pork belly in a crosshatch pattern, being careful not to cut into the meat.
  3. In a small bowl, mix together kosher salt, black pepper, garlic powder, onion powder, paprika, and cayenne pepper.
  4. Rub this spice mixture all over the pork belly, making sure to get it into the scored skin.
  5. Place the pork belly in a roasting pan, skin side up.
  6. Pour the water into the bottom of the pan to create steam during cooking.
  7. Drizzle olive oil and vinegar over the skin.
  8. In another bowl, mix baking soda with coarse sea salt and rub this mixture generously over the skin of the pork belly.
  9. Roast the pork belly in the preheated oven for 30 minutes.
  10. After 30 minutes, reduce the temperature to 325°F and continue roasting for an additional 1 hour or until the internal temperature reaches 190°F and the skin is crispy.
  11. Once done, remove from the oven and let it rest for 15 minutes before slicing.
  12. Serve warm, garnished with fresh herbs if desired.

  • For extra flavor, consider marinating the pork belly overnight in a mixture of soy sauce, garlic, and ginger before applying the spice rub.
