- 2 pounds pork belly, skin-on
- 1 tablespoon kosher salt
- 1 tablespoon black pepper
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 tablespoon paprika
- 1 teaspoon cayenne pepper (optional)
- 1 cup water
- 1 tablespoon olive oil
- 1 tablespoon white vinegar
- 1 tablespoon baking soda
- 1 tablespoon coarse sea salt (for crust)
Instructions
- Preheat your oven to 450°F.
- Score the skin of the pork belly in a crosshatch pattern, being careful not to cut into the meat.
- In a small bowl, mix together kosher salt, black pepper, garlic powder, onion powder, paprika, and cayenne pepper.
- Rub this spice mixture all over the pork belly, making sure to get it into the scored skin.
- Place the pork belly in a roasting pan, skin side up.
- Pour the water into the bottom of the pan to create steam during cooking.
- Drizzle olive oil and vinegar over the skin.
- In another bowl, mix baking soda with coarse sea salt and rub this mixture generously over the skin of the pork belly.
- Roast the pork belly in the preheated oven for 30 minutes.
- After 30 minutes, reduce the temperature to 325°F and continue roasting for an additional 1 hour or until the internal temperature reaches 190°F and the skin is crispy.
- Once done, remove from the oven and let it rest for 15 minutes before slicing.
- Serve warm, garnished with fresh herbs if desired.

- For extra flavor, consider marinating the pork belly overnight in a mixture of soy sauce, garlic, and ginger before applying the spice rub.
- Serve the lechon with a side of pickled vegetables for a refreshing contrast to the rich pork.
