Description

Delicious smoky tofu tacos topped with fresh mango salsa and creamy chipotle sauce.


Ingredients

  • 14 ounces firm tofu, pressed and drained
  • 2 tablespoons olive oil
  • 2 teaspoons smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 8 small corn tortillas
  • 1 cup shredded red cabbage
  • 1 avocado, sliced
  • Fresh cilantro, for garnish
  • 1 ripe mango, diced (for the mango salsa)
  • 1/2 red onion, finely chopped (for the mango salsa)
  • 1 jalapeño, seeded and minced (for the mango salsa)
  • Juice of 1 lime (for the mango salsa)
  • Salt to taste (for the mango salsa)
  • 1/2 cup sour cream or Greek yogurt (for the chipotle crema)
  • 12 teaspoons chipotle in adobo sauce (for the chipotle crema)
  • Juice of 1/2 lime (for the chipotle crema)
  • Salt to taste (for the chipotle crema)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the pressed tofu into small cubes and place them in a bowl. Add olive oil, smoked paprika, cumin, garlic powder, onion powder, and salt. Toss until the tofu is evenly coated.
  3. Spread the seasoned tofu on a baking sheet lined with parchment paper. Bake for 25-30 minutes, flipping halfway through, until golden and crispy.
  4. While the tofu is baking, prepare the mango salsa. In a bowl, combine diced mango, red onion, jalapeño, lime juice, and salt. Mix well and set aside.
  5. For the chipotle crema, whisk together sour cream (or Greek yogurt), chipotle in adobo, lime juice, and salt in a small bowl until smooth. Adjust the chipotle to your desired spice level.
  6. Warm the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side until pliable.
  7. Assemble the tacos by placing a generous amount of smoky tofu on each tortilla. Top with shredded cabbage, mango salsa, avocado slices, and a drizzle of chipotle crema.
  8. Garnish with fresh cilantro and serve immediately.

Notes

  • For added crunch, consider adding sliced radishes or crispy tortilla strips on top of the tacos.
  • Substitute the tofu with grilled chicken or black beans for a different protein option.
