Delicious smoky tofu tacos topped with fresh mango salsa and creamy chipotle sauce.

- 14 ounces firm tofu, pressed and drained
- 2 tablespoons olive oil
- 2 teaspoons smoked paprika
- 1 teaspoon ground cumin
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 8 small corn tortillas
- 1 cup shredded red cabbage
- 1 avocado, sliced
- Fresh cilantro, for garnish
- 1 ripe mango, diced (for the mango salsa)
- 1/2 red onion, finely chopped (for the mango salsa)
- 1 jalapeño, seeded and minced (for the mango salsa)
- Juice of 1 lime (for the mango salsa)
- Salt to taste (for the mango salsa)
- 1/2 cup sour cream or Greek yogurt (for the chipotle crema)
- 1–2 teaspoons chipotle in adobo sauce (for the chipotle crema)
- Juice of 1/2 lime (for the chipotle crema)
- Salt to taste (for the chipotle crema)
Instructions
- Preheat the oven to 400°F (200°C).
- Cut the pressed tofu into small cubes and place them in a bowl. Add olive oil, smoked paprika, cumin, garlic powder, onion powder, and salt. Toss until the tofu is evenly coated.
- Spread the seasoned tofu on a baking sheet lined with parchment paper. Bake for 25-30 minutes, flipping halfway through, until golden and crispy.
- While the tofu is baking, prepare the mango salsa. In a bowl, combine diced mango, red onion, jalapeño, lime juice, and salt. Mix well and set aside.
- For the chipotle crema, whisk together sour cream (or Greek yogurt), chipotle in adobo, lime juice, and salt in a small bowl until smooth. Adjust the chipotle to your desired spice level.
- Warm the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side until pliable.
- Assemble the tacos by placing a generous amount of smoky tofu on each tortilla. Top with shredded cabbage, mango salsa, avocado slices, and a drizzle of chipotle crema.
- Garnish with fresh cilantro and serve immediately.
Notes
- For added crunch, consider adding sliced radishes or crispy tortilla strips on top of the tacos.
- Substitute the tofu with grilled chicken or black beans for a different protein option.
