Ingredients

- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1/2 teaspoon ground cumin
- 1/4 teaspoon cayenne pepper (adjust to taste)
- 1 cup red lentils, rinsed
- 4 cups vegetable broth
- 1 large red bell pepper, roasted, peeled, and diced
- 1 can (14.5 ounces) diced tomatoes, undrained
- Salt and pepper to taste
- Fresh parsley or cilantro for garnish (optional)
Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic, smoked paprika, cumin, and cayenne pepper. Cook for an additional 1-2 minutes until fragrant.
- Add the rinsed red lentils, vegetable broth, roasted red pepper, and diced tomatoes to the pot. Bring to a boil.
- Reduce the heat to low, cover, and simmer for 25-30 minutes, or until the lentils are tender.
- Use an immersion blender to puree the soup until smooth, or carefully transfer to a blender in batches.
- Season with salt and pepper to taste. If the soup is too thick, add a little more broth or water to reach your desired consistency.
- Serve hot, garnished with fresh parsley or cilantro if desired.
Notes
- For a creamier texture, stir in 1/2 cup of coconut milk just before serving.
- Add a squeeze of fresh lemon juice for a bright flavor boost.
- You can also substitute the red lentils with green or brown lentils, but adjust cooking time as they may take longer to soften.
