Description

A flavorful and creamy dip made with roasted eggplants, smoky paprika, and tahini, perfect for serving with pita chips or fresh vegetables.


Ingredients

  • 2 medium eggplants (about 1 pound total)
  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon lemon juice
  • 1/4 cup tahini
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 400°F. Cut the eggplants in half lengthwise and score the flesh with a knife. Brush the cut sides with 1 tablespoon of olive oil and place them cut-side down on a baking sheet. Roast for 30-35 minutes, or until the flesh is soft and slightly charred. Remove from the oven and let cool slightly.
  2. In a skillet over medium heat, add the remaining tablespoon of olive oil. Sauté the chopped onion for about 5 minutes, or until translucent. Add the minced garlic, smoked paprika, cumin, salt, and black pepper. Cook for an additional 2 minutes, stirring frequently.
  3. Scoop the roasted eggplant flesh into a food processor. Add the sautéed onion and spice mixture, lemon juice, and tahini. Blend until smooth and creamy. Taste and adjust seasoning if necessary.
  4. Transfer the dip to a serving bowl and garnish with chopped parsley. Serve warm or at room temperature with pita chips, fresh vegetables, or crusty bread.

Notes

  • For a spicier kick, add a pinch of cayenne pepper or a dash of hot sauce to the dip.
  • You can also substitute the tahini with Greek yogurt for a creamier texture and a tangy flavor.
