Description

Delightful smoky grilled sardine skewers served with a tangy cherry cough chutney.


Ingredients

  • 12 fresh sardines, cleaned and butterflied
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 garlic clove, minced
  • 1 tbsp lemon juice
  • Salt and pepper to taste
  • Skewers (if wooden, soak in water 20 min)
  • 1 cup pitted cherries (fresh or frozen)
  • 1 small red chili, finely chopped
  • 1 tbsp grated ginger
  • 1 tbsp honey or maple syrup
  • 1 tbsp apple cider vinegar
  • ¼ tsp ground clove or a drop of natural cherry extract
  • Pinch of salt

Instructions

  1. In a bowl, mix olive oil, paprika, garlic, lemon juice, salt & pepper. Rub over the sardines and marinate for 20–30 minutes.
  2. In a small saucepan, combine cherries, chili, ginger, honey, vinegar, clove, and salt. Cook on low heat for 15–20 minutes, stirring often, until thick and jammy. Mash some cherries for texture or blend smooth if preferred. Let cool.
  3. Thread sardines onto skewers. Grill on high heat for 2–3 minutes per side until nicely charred and cooked through. You can also use a grill pan.
  4. Place skewers on a platter. Spoon over or serve with the cherry chutney on the side. Finish with lemon wedges and fresh herbs (like mint or parsley).

  • Ensure to soak wooden skewers to prevent burning.
  • Adjust the level of chili based on your spice preference.
  • Cherry chutney can be made ahead of time and stored in the refrigerator.
