  • 1 cup pitted Medjool dates (about 1012 dates)
  • 1 cup walnuts
  • 1/2 cup rolled oats
  • 1/4 cup unsweetened cocoa powder
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon sea salt
  • 1 teaspoon vanilla extract
  • 1 tablespoon maple syrup (optional, for extra sweetness)

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper, leaving some overhang for easy removal later.
  2. In a food processor, combine the pitted dates and walnuts. Pulse until the mixture resembles a coarse meal.
  3. Add the rolled oats, cocoa powder, smoked paprika, sea salt, vanilla extract, and maple syrup (if using) to the food processor. Blend until everything is well combined and sticky.
  4. Transfer the mixture to the prepared baking dish. Press it down firmly and evenly using your hands or a spatula.
  5. Bake in the preheated oven for 15-20 minutes, or until the edges are slightly golden.
  6. Remove from the oven and let it cool completely in the pan. Once cooled, lift the bars out using the parchment paper and cut into squares or rectangles.
