A delicious and nutritious recipe for Smoky Date & Walnut Energy Bars that provide a great energy boost.
Ingredients

- 1 cup pitted Medjool dates (about 10–12 dates)
- 1 cup walnuts
- 1/2 cup rolled oats
- 1/4 cup unsweetened cocoa powder
- 1/4 teaspoon smoked paprika
- 1/4 teaspoon sea salt
- 1 teaspoon vanilla extract
- 1 tablespoon maple syrup (optional, for extra sweetness)
Instructions
- Preheat your oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper, leaving some overhang for easy removal later.
- In a food processor, combine the pitted dates and walnuts. Pulse until the mixture resembles a coarse meal.
- Add the rolled oats, cocoa powder, smoked paprika, sea salt, vanilla extract, and maple syrup (if using) to the food processor. Blend until everything is well combined and sticky.
- Transfer the mixture to the prepared baking dish. Press it down firmly and evenly using your hands or a spatula.
- Bake in the preheated oven for 15-20 minutes, or until the edges are slightly golden.
- Remove from the oven and let it cool completely in the pan. Once cooled, lift the bars out using the parchment paper and cut into squares or rectangles.
Notes
- For added flavor, consider mixing in a tablespoon of chia seeds or flaxseeds for extra nutrition.
- Substitute pecans or almonds for walnuts if you prefer a different nut flavor.
