Ingredients

- 2 tablespoons soy sauce
- 1 tablespoon liquid smoke
- 1 avocado, sliced
- 1 cup cooked sushi rice
- 1/2 cup edamame, shelled
- 1/4 cup pickled ginger
- 1/4 cup seaweed salad
- Sesame seeds for garnish
- Chopped green onions for garnish
Instructions
- Cut the watermelon into cubes and remove the rind.
- In a bowl, mix soy sauce and liquid smoke, then marinate the watermelon cubes for at least 30 minutes.
- Prepare the sushi rice according to package instructions.
- Assemble the poke bowl by placing a scoop of sushi rice at the bottom.
- Top the rice with marinated watermelon, avocado slices, edamame, pickled ginger, and seaweed salad.
- Garnish with sesame seeds and chopped green onions.
