- 2 ounces smoked trout, flaked
- 1/2 cup Gruyère cheese, shredded
- 1 tablespoon fresh chives, chopped
- 1 tablespoon unsalted butter
- Salt and pepper to taste
Instructions
- In a bowl, whisk together the eggs, salt, and pepper until well combined and slightly frothy.
- Heat a non-stick skillet over medium heat and add the butter. Allow it to melt and coat the bottom of the pan.
- Pour the egg mixture into the skillet, tilting the pan to ensure the eggs spread evenly.
- Cook the eggs for about 2-3 minutes, gently lifting the edges with a spatula to allow uncooked eggs to flow to the edges.
- Once the eggs are mostly set but still slightly runny on top, sprinkle the flaked smoked trout, shredded Gruyère cheese, and chopped chives evenly over one half of the omelet.
- Carefully fold the other half of the omelet over the filling and cook for an additional 1-2 minutes, or until the cheese is melted and the eggs are fully cooked.
- Slide the omelet onto a plate and serve immediately.

- For a creamier texture, add a splash of milk or cream to the eggs before whisking.
