  • 2 ounces smoked trout, flaked
  • 1/2 cup Gruyère cheese, shredded
  • 1 tablespoon fresh chives, chopped
  • 1 tablespoon unsalted butter
  • Salt and pepper to taste

Instructions

  1. In a bowl, whisk together the eggs, salt, and pepper until well combined and slightly frothy.
  2. Heat a non-stick skillet over medium heat and add the butter. Allow it to melt and coat the bottom of the pan.
  3. Pour the egg mixture into the skillet, tilting the pan to ensure the eggs spread evenly.
  4. Cook the eggs for about 2-3 minutes, gently lifting the edges with a spatula to allow uncooked eggs to flow to the edges.
  5. Once the eggs are mostly set but still slightly runny on top, sprinkle the flaked smoked trout, shredded Gruyère cheese, and chopped chives evenly over one half of the omelet.
  6. Carefully fold the other half of the omelet over the filling and cook for an additional 1-2 minutes, or until the cheese is melted and the eggs are fully cooked.
  7. Slide the omelet onto a plate and serve immediately.
